Summer oatmeal with roasted grape and peach
This Summer, indulge every moment of your day with Summer seasonal local fruits. They are the best things to eat right now, sweet, beautiful flavor, colorful, antioxidants…they are very comforting!
I decided to make a Summer oatmeal using oven roasted organic grapes and white peach. I am using some banana: The first 1/2 banana should be completely dissolved in the oatmeal, making it creamy, while the second 1/2 banana provides the oatmeal with some texture and naturally sweetens
Summer Comforting Oatmeal Recipe

Yield: 1 serving Cook Time: 15 min Total Time: 15 min
INGREDIENTS
- 1 cups rolled oats (GF if available)
- 1 cup filtered water
- 3/4 tsp cinnamon
- 1 medium banana, sliced
- 1/2 tsp pure vanilla extract
- 1 tsp coconut oil
INGREDIENTS: Toppings
- 1 Tbsp nut butter (I used peanut butter)
- 1 white peach, roasted*
- organic grapes roasted*
- Sprinkle of chia seeds
- Sprinkle of hemp seeds
- coconut flakes
- nut milk ( I used almond milk)
directions
- To a medium pot on high heat, add the oats, water, cinnamon, and 1.2 of the banana. Bring to a boil, then reduce to a simmer for 8 minutes, stirring on occasion.
- Add the other 1/2 of the banana and cooking for another 2-5 minutes..
- At the end, add the vanilla extract and remove from the heat. Add more water if you like it thinner, or cook for another couple minutes longer if you like it thicker. Add toppings add some nut milk to get extra calcium and thinner oatmeal!

- How to roast fruits in your oven : preheat oven to 425 F, on a baking tray place parchment paper and top with washed fruits. Sprinkle some coconut oil and bake for 20-25 minutes.
