California Winter Salad
Friday. 1 pm. 80’s outside. I guess a very refreshing salad is de rigueur. This is another east to make recipe when you are craving for some good salad.
All ingredients are local from Southern California. I wanted something juicy, crispy with no calories. Jicama is perfect super crispy and little juicy. Because it does not taste anything reallyit is important to use a nice sharp dressing : White balsamic vinegar, honey, some mandarin juice and some sea salt.
This salad is made of Jicama, fresh mandarin, fresh mint, Medjool dates, avocado and almonds.
California Winter Salad
SERVING 1
- 1/2 Jicama peeled and cut in thin strip
- 2 mandarin peeled and thinely sliced + 1 extra for juice
- 1 avocado cut in small piece
- 3-4 Medjool dates
- fresh mint
- white balsamic vinegar
- sea salt
- almonds
- In a bowl place all ingredient except vinegar, honey and sea salt.
- In another bowl mix vinegar, honey and pinch of sea salt. Pour over the salad, eat immediately.
