Class description We are making vanilla cream puff and chocolate eclairs
Making 8 – 10
Double ingredients same ingredients used each day
Ingredients
1/2 tsp salt
2 tsp sugar
6 Tbsp unsalted butter, cut into small chunks
1 cup flour
3 medium eggs, at room temperature
1 1/4 cups (300 ml) milk (whole or 2%)
1/2 vanilla bean, split lengthwise or 1 teaspoon pure vanilla extract or vanilla bean paste
3 large egg yolks
1/4 cup (50 grams) granulated white sugar
2 tablespoons (20 grams) all-purpose flour
2 tablespoons (20 grams) cornstarch (corn flour)
Day 2 chocolate eclairs additional ingredients
Cocoa powder
Icing sugar
Chocolate chips
