French Comfort Food : Coq Au Vin
For the “Paris Bistro” CooKing class, I wanted to make a “Coq au Vin”. This delicious complete meal has been in our family’s repertoire for ever. This is a typical rich, sensuous dish made with hearty and healthy ingredients: Chicken, Pearls onions, Pinot noir wine, tomato paste, mushrooms, herbs…The Classic and thruly recipe calls for at least 2-3 hours slow cooking . But when you conduct a hands-on Cooking class, and cooking from scratch, you can’t use 2-3 hours to make the dish.
I am happy to report that in a little that 1 hour you can make a delicious, warmfull of flavors Coq au vin. During the class we served it with boiled potatoes topped with fresh butter and chopped parlsey … it was A-M-A-Z-I-N-G
