Halloween Muffins!
I have been in “Homemade” mood lately. I am making our own baguettes, sandwich bread, pastas and even Ricotta from scratch! I want my family to eat healthy and it feel good to make and create thing homemade from scratch.
I had left two very ripped bananas and if when know me, you know that I hate to waste food and that I am using everything I have in my pantry, fridge or freezer. First I wanted to make some banana bread but I decided to make muffins. My family is not crazy about muffins and I bake them really scarcely. I do not know why because muffins bake quickly and are easy to carry.
It was almost time to pick up my kids at school and I thought that some muffins would be perfect for their snack walking back home. I took with me four muffins, two per kids and headed to school. My kids devoured all muffins in no time and even asked for more. Even my daughter had one for her next morning breakfast, one for her snack and one at lunch at school! Sure it these muffins will be now a staple in our family.
The recipe I wanted to make is the Banana-brown sugar muffins by Maria Helm Sinskey a wonderful Chef and mother. I had to substitute quite a lot of ingredients since I had no time to go to the grocery store.The recipe called for 4 ripped bananas since I had only 2 I needed to find something else to add texture to the muffins. I decided to cook sweet potatoes in boiling water then peel them then smash them.
The night before I made some homemaded sandwich bread for our breakfast so I had only 1 cup of all- purpose flour left. I checked my pantry and noticed TJ’s Multigrain pancake mix and I used it instead of Whole weat flour. I wanted the muffins to have some crunchiness but I wanted something very subtle not too heavy. I saw some Flax seeds and decided it would be perfect in the muffins… then I thought Banana with chocolate go so well together I should add some too. It sounds too good, right? Yes they were delicious and healthy too!

He is the recipe for my banana-chocolate muffins…. very orange thanks to the secret ingredient: Sweet potato so perfect for Halloween!
Banana-chocolate-sweet potato-flax seeds muffins!
Make 12 muffins
1 cup all-purpose flour
1 cup Multigrain Pancake mix
1/4 teaspoon salt
¼ cup whole milk
2 large ripped bananas, mashed
2 small organic sweet potatoes cooked, peeled , mashed
3/4 cup white sugar
2 large organic eggs
1/3 cup butter, melted
2 Tbsp Fax seeds
1/3 cup chocolate chips
1. Preheat oven to 350 degrees.
2. Coat muffin pans with butter, or use paper liners. Sift together the flours and salt; set aside.
3. Combine bananas, milk and sweet potatoes in a large bowl and set aside. In a bowl mix sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and banana mix until smooth. Mix all well . Add Flax seeds and the chocolate chips. Mix again. Scoop into muffin pans.
4. Bake for 20 minutes. Muffins will spring back when lightly tapped.
