Easy to make hot drinks : How to make hot chocolate and Chai tea

Do you have your own comfort hot drinks during cold -rainy days? If so you may like this new post about homemade  delicious hot drinks. Cheaper that Starbucks and as good  I used  ingredients from my pantry and fridge but you can be creative and adventurous you can add as spice you like, honey or maple syrup to sweet them too.

Drinking a hot delicious can be magical, calming. Perfect for dreaming sitting in your favorite armchair or  while reading a great novel.

When I drink one of these hot drinks. Time stops. I pose. I breath and I relax.

Wittamer’s Belgian Hot chocolate with Whipped cream

( Recipe adapted from David Lebovitz)

Four to six servings

1 quart (1l) half-and-half or whole milk
8 ounces (230g) bittersweet or semisweet chocolate, finely chopped
4 ounces (115g) milk chocolate, finely chopped
tiny pinch of salt
1/2 teaspoon ground cinnamon

1. Warm about one-third of the half-and-half or milk, with the chopped chocolates and salt, stirring until the chocolate is melted.

2. Whisk in the remaining half-and-half or milk, heating until the mixture is warmed through. Add the cinnamon.

3. Use a hand-held blender, or a whisk, and mix the hot chocolate until it’s completely smooth. Serve very warm.

4.Serve with whipped cream. See recipe below

  • ½ heavy cream
  • 2 tsp icing sugar

In a stand mixer whip together cream and icing sugar until firm. Place in the fridge until needed.

 

Spanish hot thick chocolate

Makes Two mugs

2 cups whole milk

3 oz  70%   dark chocolate shredded

1/3  cup sugar

1/2 tsp. cornstarch

Chili pepper or Espelette pepper

Cream

  1. Pour the milk into a medium saucepan and add the cornstarh.
  2. Whisk to dissolve the cornstarch.
  3. Once the cornstarch is dissolved, heat the milk on medium heat just until it boils, then remove from heat.
  4. Add the chocolate squares immediately and begin stirring until the chocolate is completely melted.
  5. Serve in cups or mugs,
  6. Add with cream . Serve immediately.

 

Celine’s Chai Tea

2 Cups

1-1/2 cups water
1 stick of cinnamon
3 cardamom pods

3  anise seeds

1 tsp coriander seeds

½ tsp fennel seeds
3 whole cloves
2/3 cup milk
6 tsp. sugar (or to taste)
3 teaspoons Assam black tea

1 tsp fresh grated ginger

1. Put 1-1/2 cups water in saucepan.

2. In dry pan roast the spices gently for few seconds until you can smell all the flavor.

2. Add at the spices  to the water and bring to a boil.

3. Cover, turn heat to low and simmer for 10 minutes.

4. Add the milk and sugar and bring to a simmer again.

5. Throw in the tea leaves, cover, and turn off the heat. After 2 minutes, strain the tea into two cups and serve immediately.

 

Chia seeds, cinamon and cardamon hot chocolate

1 quart (1l) whole milk
9 ounces  semisweet chocolate, finely chopped
2 Tbsp Chia seeds
1/2 teaspoon ground cinnamon

1/8 cardamon powder

1. Warm about one-third of milk, with the chopped chocolate , stirring until the chocolate is melted.

2. Whisk in the remaining milk, heating until the mixture is warmed through. Add the cinnamon ,cardamon and Chia seeds.

3. Use a a whisk, and mix the hot chocolate until it’s completely smooth. . Let sit for 5 minutes.

4.Serve with Whipped cream. See recipe below

  • ½ heavy cream
