Indian Sauteed Cauliflowers
Sometimes, a dish comes along that not only asks for minimal hand-on time, but cooks almost by itself happily and quietly. You throw a few ingredients together and magically, with a little heat, the meal transforms itself from something relatively plain to something of a treat. In fact, this cauliflower was so good, I could not stopping nibbling at it when trying to take the pictures. It was hard to resist.
At the end this dish a very sophisticated dish – precisely the effect you might want for at an impromptu lunch or dinner, where your guests, not really vegetable eaters, not only serve themselves seconds but will beg you to share the recipe.
The perfectly cooking of the cauliflowers bite-size pieces, the sweetness of the raisins, the Indian spices and the exceptional Olive oil, made this dish , Celine’s dish of the week!

Indian Curried Sauteed Cauliflower
1 head cauliflower
2 T Rotture di Oro Olive Oil
1 tsp garam masala or Indian Spices
Salt and pepper to taste
1 tsp Cinnamon
1 T pine nuts
1 Garlic clove minced
2 T Golden Raisins
1 organic Lemon juice + zest
1/2 tsp finely grinded cilantro
Parmesan cheese optional
Rinse and dry the cauliflower. Cut the head in half through the core. Cut each half in half again through the core. Cut out and discard the cores. Cut the florets into bite-size pieces.
Use a large frying pan which will hold all the cauliflower in a single layer. Preheat the pan for 30 seconds over medium-high heat, then add oil and heat about 1 minute. Add cauliflower, curry spices, salt and pepper and cook 6-8 minutes, stirring only occasionally so the onion carmelizes and cauliflower gets slightly browned.
Add raisins, lemon juice, pine nuts and stir, then put on serving dish. And serve with Parmesan thinely cut over.
