Organic Polenta Sandwich with Smoked Salmon, dill and Yogurt
While writing my Blog I realize how food is related to my past, my childhood, my family, our traditions, our values . I wish every single child in the world has great memories about the meal he shares and cooks with his own family.
I love Polenta. Creamy, sauted, with cheese…any form.The first time I ate it was in Italy during our annual Summer vacation with my parents and my sister. My parents found through the Italian Tourism Office some flyer’s about a hotel right on the Italian Adriatic Coast, paid a deposit and we drove for 2 days to reach this Italian Hotel . At this time there was no Internet so you were relying on Flyer’s and brochures. So when we showed up at the hotel after quite a long drive we discovered with horror that the room we had, was in the basement next door to the Laundry Room. It was not quite the room and vacation we were expecting. It was a disaster. So my parents decided to find another hotel. The front beach was full of Hotels, so even if it was August ( High Season) we could find a room in a beautiful , modern, brand new hotel right on the beach. What we did not know is that this hotel was half-board meaning that each day we had to eat our lunch or diner at the hotel. We did not know that this hotel had the best Chef in town and everyday we experienced amazing, delicious, meals. Every morning when we were having breakfast a Maitre d’ would stop at each clients’ table proposing the menu of the day and asking what they would have for lunch or diner. This is how we discovered one night a Creamy Polenta to die for. Since, every time I eat a delicious Italian meal I can’t stop thinking about this wonderful hotel and Chef.
My recipe new Recipe is a quick one as , 1,2, 3.
1. Take the Trader Joe’s Organic Polenta ( already cooked that look like a big yellow sausage). Cut slices and sauteed in Olive oil each side. Then when golden put on the side.
2. Cut some fresh dill, mix it with Trader Joe’s Greek Style Yogurt, add salt and pepper set aside.
3. Take your Polenta slices, spread them with the Yogurt mix, add on it some Smoked Salmon slices, add more dill if you want. Then top with another polenta slice… Voila !!! you have a beautiful, Healthy, Delicious kind of Hamburger!
